Tuna Casserole:

One of my favorite, easy to make recipes and cheap recipes is this tuna casserole. And if you have unexpected guests, just add more macaroni! This recipe will feed four hungry people, one or maybe 2 people that haven't eaten since breakfast or haven't eaten at all yet today. Leftovers keep well for about 4 days in a tightly covered dish too, so don't worry about making too much.

Ingredients
1 1/2 cups elbow macaroni (uncooked)
1 can condensed mushroom soup
2 tablespoons cheddar cheese powder
1 can flaked tuna
1/4 cup milk
1/2 cup grated cheddar cheese
1/2 teaspoon salt
1 tablespoon margarine
Optional Additions
1 can sliced mushrooms
or 1 can peas
1/2 teaspoon pepper or other spices (to your taste, after all, you're cooking it, not me!)

Cooking Equipment Needed
Medium Size Pot
Large Casserole or baking dish with lid
Strainer
Spoon, can opener, measuring cup
Warm your oven to 375 F

(The stove and oven should not have to be mentioned, right?)

Step One: Fill the pot about 3/4 full with cold water and the salt and boil it. When it reaches the boiling point add the macaroni. Turn it down to what they call a rolling boil. That's about halfway from "high" and "medium" temperature on the stove. You're gonna cook the macaroni until it's a little soft, about 7 minutes. Take your spoon and grab a few, if they are soft (don't burn your mouth!) then they are ready. Strain out the water and check out step two.

Step Two (do some of this while the macaroni is cooking): Into your casserole or baking dish put the tuna (after you've strained it of the tuna water, the tuna water makes a nice treat for your cat if you have one, and if it does it's business outside, otherwise just dump the tuna juice down the drain, you don't want to have kitty diarrhea inside!) the mushroom soup, the milk, margarine, the cheddar cheese powder and any of the optional ingredients you may be using. Stir it all up real nice and then add your cooked (and still hot!) macaroni. Stir it all up again so it's nice and mixed, then with your spoon flatten down the top. Don't pound it down, just smooth the top. Then add your grated cheddar cheese to the top, put the lid on the casserole or baking dish and pop it into the oven for about 25 minutes total. At 15 cooked minutes remove the lid so the cheese on top will melt nicely. When the 25 minutes is up, you should have a slightly bubbly cheddar cheese top to the tuna casserole and that means it's done!

Total Cost: Approximately 90 cents per person when feeding 4 adults. Be sure to use all the cheap ingredients that you can find, the tuna and cheese will cover it all up anyways.

Tuna Casserole - Mmmm Good!

 

Cheap Burritos:

Ingredients:
One large onion, chopped
2 garlic cloves, chopped
1/4 pound of ground beef
16 oz can of beans , drained (pinto, red, kidney etc).. i like pinto
1 small can of tomato sauce
cumin to taste
hotsauce if you like it spicier
1/4 cup of shredded cheese

Directions:
Saute the onion and garlic , making sure garlic doesn't burn (or its bitter)
add ground beef and brown.. Drain beef.
add drained beans, tomato sauce and cook it till it thickens.
add cumin to taste and hotsauce if desired.
Put bean/meat mixture into flour tortillas and top with cheese
Roll it up. Eat

Can also be served on rice. It's cheap and good.

Mom's Cheap Chili

regular ground meat - any amount but don't be stingy 3/4 to 1.5 lbs is great.
1 can chili beans (with sauce)
1 can dark red kidney beans
1 can crushed tomatoes
1 packet chili seasoning - not chili powder! There is a difference!
1 bag pre-shredded fiesta cheese blend

1 can cinnamon rolls (Pillsbury, ready to cook)
Fritos Scoops Tortilla chips


Brown the meat. Drain it. Add the other ingredients, juices and all. Once they're mixed and simmering, follow the directions on the can of cinnamon rolls. I know, it sounds strange, but they taste really good with the chili. Once cinnamon rolls are done, do the frosting thing. Pour whole bag of cheese into chili. Stir until melted. Serve, using fritos instead of spoon.

Tuna Melt Sandwiches

Robrob8 loves tuna, it's cheap and can be added to many things. Be sure to always pick some up when it's on sale. Get the flaked tuna, the chunk usually costs a few cents more, and you're just gonna flake it anyways.

Ingredients
sliced bread (You're going to cook the bread, so it doesn't need to be fresh)
1 or more cans of tuna (depends on how many people your feeding. If it's just you, then one can will do, along with a couple of buns
1 1/2 tablespoons per can of tuna of mayonnaise or Kraft Miracle Whip (whichever you have handy)
processed cheese slices 1 per bun
margarine
pepper to taste

Cooking Equipment Needed
Medium or large frying pan
Spatula

Drain the tuna, add the mayonnaise and pepper to taste. Turn on the stove and preheat the frying pan at just about medium heat. Too hot and you'll burn everything in sight. Put a little margarine in it, you don't want the bread to stick to the pan. Spread margarine on both slices of the bread and add some of the tuna mixture and a slice of cheese, put the sandwich together and butter the third side. Once you place it into the frying pan, butter the fourth side. Fry it until the cheese is melted and the bread a golden brown color.

I like to dip mine in ketchup, but ketchup and tuna isn't for everyone. Enjoy!
